Some who are from the Northeastern part of India or grew up there will be familiar with momos. You probably love it so much that it might always be treasured in your fridge. I was born and brought up in Guwahati. The place is known for its hilly regions, flowing streams and cool air. The climate is always cool and most pleasant to have piping hot chicken momos with spicy chutney! They even serve broth or clear soup – a perfect way to warm up.

Momos can either be steamed or fried and served with soup. Momos have become world snacks, they have derived different names in different parts of the world such as – dim sum, dumplings, potstickers or Modaks – our very own momos of the beloved elephant-headed god – Ganesha!

So, let’s begin the process of making perfect soft juicy Chicken steamy momos from scratch.

Prepping For Chicken Momos

•Chop the vegetables very finely and keep them aside in a bowl
•Make a ginger garlic paste else nowadays you can get it ready-made from the markets.

Dough Making For Chicken Momos

•In a bowl take all-purpose flour, add oil, and a pinch of salt, and mix it finely
•Add a little bit of water to it and knead a soft dough for around 10 minutes
•Once the dough is ready, cover it with a wet cloth and keep it aside for nearly 30 minutes.

Filling For Chicken Momos

•In a large mixing bowl, add the grated chicken, carrots, cabbage, spring onions, ginger garlic paste, soya sauce, salt, black pepper, red chilli power & a bit of garam masala.
•Mix it well till the masalas smoothly blend with veggies and chicken pieces.

Bring Dough & Filling Together

•Now that you’ve kept the dough aside for 30 mins, divide the dough into 20-25 pieces and make small balls out of it.
•Take one ball, dip it in dry flour, and roll it to small discs – similar to small puris
•Take the puri-shaped disk in your hand and fill one spoon of mixture in the center.
•Turn this into a wonderful-looking momos shape (well it’s an art and needs a lot of practice & persistence. You won’t get this on the first try.
•This way make all the momos and put them on the greased-holed tray.
•Put the tray into the steamer and steam chicken momos for 15-20 minutes.
•Once done switch off the steamer & open the lid. Gently remove all the momos onto the serving plate.
•It’s Ready! Serve piping hot n fresh chicken momos with chutneys or mayo dipping

Few Things To Remember

•Your dough should be soft yet durable enough to hold the fillings and give the desired shape.
•Don’t cook the filling separately and then stuff it. It will ooze the moisture and your momos get soggy.
•If momos are sticky to touch, steam them for some more time, when ready they will be sticky.
•Grease the pan generously, else your chicken momos will stick to the pan
•Don’t overcook chicken momos. Steaming shouldn’t take more than 15-20 minutes. Anything more than this could turn your filling dry & dough hard.
